Guilt Free Banana Bread Recipe


Banana Bread is one of my all time favourite foods, it doesn't matter what time of day or year it is Banana Bread is always appropriate! This recipe which is 100% Vegan that can be easily made gluten free is one I actually I stumbled upon a few years back when I was in college (struggling to satisfy a craving with the very little baking ingredients I had) & it has quickly become one of my favourites & certainly a go to when ingredients are in short supply! It is so moist and delicious It's hard not to eat 1/2 a loaf - but quite honestly given the ingredients excluding the sugar I never feel guilty when it happens! 

Ingredients:


  • 1/2 cup coconut oil, or whatever your preference is ( You can also replace up to 1/3 of a cup with applesauce, which I find makes it deliciously sweet)
  • 1/2 a cup - 1 cup of brown or white sugar to sweeten
  • 1 1/2 cups of flour or Gluten Free Flour (which is available by a variety of brands & does not effect the taste results in the slightest) 
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 very ripe mashed bananas (which is roughly 1 & 1/2 cups )
  • 1-2 teaspoons pure vanilla
  • 1/2 cup nuts / chocolate of your choice (optional) 

  • Directions:

    1. Preheat oven to 325 degrees F (165 degrees C). 
    2. Using your coconut or oil of choice lightly grease an 8x4 inch loaf pan. (or muffin tins but you will need to adjust the time to closer to 30min)
    3. In a large bowl mix together all ingredients! No need to separate your wet & dry this recipe is seriously NO HASTLE!
    4.  Pour batter into prepared pan.
    5. Bake in preheated oven for 60 minutes, or until it tests done with a toothpick (comes out clean).
